TIPS (Things to look for when buying whole fish) a) Flesh should be firm and taut. b)    When pressed, flesh should spring back. c)    The fish should smell ocean like or like a clean pool. d)    Gills should be cherry red, not at all brown. e) With exceptions of a few types, eyes should be clear and protruding. f)    Tail should be moist and flat not dry and curled up. g) If frozen it should be rock hard to touch, with no evidence of previous defrosting. .......................................................................
