What is the difference between spare ribs, back ribs and country style ribs?

- Spare ribs have the leanest meat but are the most popular.
- Back ribs contain the rib bones and the “finger meat” between the ribs
- Country-style ribs are very meaty.

What is the difference between regular pork bacon & Canadian bacon?

- Canadian bacon has less salt content & is more Lean.

SELECTION
• Look for meat that is pale reddish pink. Any marbling should be creamy white, firm and smooth.
• Loin meat is paler than leg meat with the exception of the tenderloin which is a deep red. Pork loin should have a fine grain.
• Look for packages without any liquid, if there is liquid present, it should be clear not cloudy.

STORAGE
• Store pork in the coldest part of the refrigerator. Pork can be refrigerated for 3 days and frozen for 4 to 6 months.
• The smaller the piece of pork, the faster it will spoil.
• If you don’t plan to use the pork within a few days, freeze it immediately.
• Prevent freezer burn by re-wrapping the meat in moisture proof, airtight materials such as food freezer bags or heavy duty aluminum foil.

HANDLING
• Wash hands with hot soapy water before and after handling pork.
• Do not use the meat knife to cut vegetables without washing the knife and cutting board first. Wiping is not sufficient to kill bacteria.
• Never place cooked pork back on the same platter used before cooking.
• Always defrost and marinate pork in the refrigerator, never on the counter.
