TIPS (Things to look for when buying whole fish)

a) Flesh should be firm and taut.
b)    When pressed, flesh should spring back.
c)    The fish should smell ocean like or like a clean pool.
d)    Gills should be cherry red, not at all brown.
e) With exceptions of a few types, eyes should be clear and protruding.
f)    Tail should be moist and flat not dry and curled up.
g) If frozen it should be rock hard to touch, with no evidence of previous defrosting.

1. Croakers
So called for their croaking sounds when they pop their heads above water.
Use: They are best pan-fried. Almost always sold as whole.

They are inexpensive and tasty with moderate, lean, firm flesh.









2. Cat-fish

So called for its cat-whisker-like barbells, no scales and a somewhat flattened head.

Basa/Swai – Catfish Family

Catfish is mostly of American origin, Basa is Vietnamese catfish and Swai is of Cambodian origin. They are sold all year round as fillets. All catfish have tough skin which cannot be eaten. Of the three, Basa is the most flavorful fish with delicate texture and white flesh.
