Goat
& Vegetable Stew With
rice
INGREDIENTS
• 2.2 lbs goat cubes
• 4 carrots cut into thin slices
• 1 onion (sliced)
• Seasoning (1 table spoon)
• 14 ounces green lima beans
• 1 cup cilantro (cut/chopped)
• 1 tomato (diced) ¼
• Red pepper (diced) ¼
• Cumin, coriander, paprika, royco, salt, powdered pepper, olive oil,
simba mbili curry powder.

METHOD
• Heat 1 tablespoon of olive oil in a large pot over medium-high
heat
•
Season goat with a pinch of salt & pepper
• Cook turning occasionally until well done and transfer
to a plate
• Add carrots, onion and remaining oil to the cooking pot
• Cook until beginning to soften (3-4 mins)
• Add tomatoes and red peppers
• Simmer until the vegetables are tender (8-10 mins)
• Add the cooked goat, cilantro, salt, cumin, paprika, pepper,
curry powder and stir for a few minutes
