We freeze our sausages in vacuum packs for maximum freshness ready to ship for our customers across the nation. The packs are made of strong, insoluble, robust material which can stand natural freezer condition for health safety.

Sausage is perishable like most foods. Vacuum packed sausage can be stored in the freezer. Once opened try to eliminate air from the packaging by re-freezing in zipper bangs or plastic wrap.

Sausage can be frozen up to 6 months without affecting its flavor or quality. Sausages stored in the freezer for many months undergo loss of flavor and quality. We recommend leaving the sausages in the vacuum packs that come with it until you are ready to use it.

To store in the refrigerator for 1 or 2 days, re-wrap sausage tightly keeping air out. Sausages will not spoil if proper storage and safe handling methods are followed. If the sausages get spoiled, smells or looks spoilt, use common sense and discard immediately.

1. How long can Paddy’s Sausages be stored in the fridge?
Paddy’s Farmers Choice Sausages can be refrigerated 2-3 days in the fridge and up to 6 months in the freezer. Paddy’s FC sausages are packed in vacuum pack deep trays with a liner seal that is easy to tear. Always refrigerate the sausages after opening.

2. How do you cook them?
Whether grilling, frying or barbecuing, the general rules for cooking fresh sausages are;

a) Cook sausages slow.
b) Never prick a sausage (you let all juices/flavor escape).
c) Prior to cooking cut links cleanly with a sharp knife.
d) Cook till doneness. Sausages that are cooked too quickly or with high heat or oil tend to burst the skin open and will cause the sausage to shrink.

3. How long can Paddy’s FC sausages be left in the fridge unopened?
Unopened sausage container is vacuum packed and can last up to 22 days in the fridge. Unopened Paddy’s FC sausage packed in a freezer ready container/tray lasts up to six months in the freezer and would maintain its original flavor.

4. Is it true that due to quality ingredients gourmet sausages can cost more?
It all comes down to quality ingredients. Naturally it costs more to use the best natural ingredients, not forgetting the details and state of the art production and shipping process that makes Paddy’s Farmers Choice sausages the best. Yes, you will see a slightly higher cost but it is a product that is worth every penny; with every bite!

5. Why does Paddy's use additives in the sausages, yet you say your product is natural? Many food labels have strange sounding names indicating use of additives which can be intimidating and confusing, if you are trying to eat a decently healthy diet. They make you feel like you need a refresher course in Chemistry!

Here is your answer! Many foods contain fats. When fat is exposed to air it combines with oxygen and oxidizes. Oxidation makes food rancid. Rancid food tastes and smells bad. Additives are used to protect and preserve flavor. Additives are antioxidants, the opposite of oxidation. Thus they prevent fats from being rancid by inhibiting their reaction to oxygen. Additives are used in very tiny quantities to do their job. Without them many packaged foods would spoil before they reached the stores or soon after you purchased them. These additives are the reason bread stays fresh several days instead of just one and it’s the same reason you want your sausages to stay fresh!

6. Products that say “Fully Cooked” are they ready to eat?

9. What are gourmet sausages?
Sausages can just be sausages. But gourmet means premium quality. That means that Paddy’s FC Gourmet Sausages are of quality and the finest cuts only. The ingredients are also the finest! We actually use Black Angus beef for beef sausages and the finest pork breed meats for pork sausages.

10. What is the true meaning of “lean” as in lean cuts?
USDA requirements states that sausage need only be 55% lean – that’s nearly half fat! Paddy’s FC gourmet sausage contains at least 85% lean fresh pork or beef. Many commodity sausages out there follow these minimum requirements. With Paddy’s that is not just enough. We make them all the way from natural spices to leanest cuts and natural ingredients to sum it all up!

11. Are your sausages appropriate for sodium-restricted diets?
As you may know or not know, much salt is risky for your health. The American Heart Association recommends no more than 3,000 mg of sodium per day. Paddy’s FC sausages contain on average 250mg or less of sodium per serving.
